PreparationPreheat oven to 350°F. Place the fresh pitted cherries in an ungreased 8” x 8” baking dish. In a small bowl, stir together the sugar, cornstarch, lemon juice, almond extract, and cinnamon. Pour the mixture over the cherries and gently stir until the cherries are evenly coated. In a medium bowl, combine the flour, brown sugar, and cinnamon. Add the softened butter and mix with a fork until the topping becomes crumbly. Sprinkle the crumb topping evenly over the cherry filling. Bake for 30–35 minutes, or until the topping is golden brown and the cherry filling is bubbling around the edges. Let cool for 10–15 minutes before serving. Serve warm or at room temperature. Top with whipped topping or vanilla ice cream if desired.
